I usually work until 6:00 on Mondays...that means Bil is the Chef du Jour. He made these for dinner last night--I haven't made them in so long and forgot how totally delicious they are. Finger Lickin' Good for sure!
Slow Cooker BBQ Ribs
1-2 Pkgs of pork side or back ribs (cut into 2-3 rib pieces)
mustard powder
fresh cracked pepper
1 onion chopped
1 jar Diana Original BBQ sauce (or your favourite...this one just happens to be mine)
Sprinkle the mustard powder and pepper on the ribs and throw them in the crock pot. Cover with onion and then sauce. Toss a little to coat the ribs in sauce. Cook on high for 3-4 hours or low 5-6 hours.
Tip: so easy to make as much or as little as you like, just add more or less ribs/sauce!

This makes me sad...(and a little bit mad too..)
As you know , I don't usually "copy and paste" much in this blog, as I much prefer to share my own thoughts and opinions about a particular topic. This however, is already quite perfectly written--and I don't know that I could add much to it--with the exception of expanding on a couple of ideas...
This has come from one of my favourite blogs--Fooducate.com. I have blogged about them before, and I can't express how much I love what they are doing--educating people about the food industry, marketing and such, if you haven't yet, check them out...This is their post today:
How does this make you feel? Sad, Mad, Apathetic?
Tomorrow I will expand a little on why I find this so distressing--not just for my own sanity, but for our culture as a whole....
Crock Pot Spaghetti Sauce
1 lb gound turkey or beef
1 onion chopped
2-3 cloves garlic minced
3 ribs of celery chopped
8-10 mushrooms sliced
a couple good handfuls of dried red lentils (they help to absorb any extra liquid, do you have a nice thick sauce)
1 tbsp sugar (to cut the acidity of the tomato)
2 tbsp of your favourite italian seasoning mix or a combo of dried oregano, basil, thyme
2 bay leaves
S&P
2, 28 oz cans diced, no salt tomatoes
2 cans of your favourite tomato sauce
Brown turkey in a hot frypan. Add onions and cook until translucent. Add mushrooms, minced garlic and celery-cook until soft. Combine the turkey and all other ingredients into the crockpot and cook on low for 6-8 hours (or high for 3-4).
Tip: this should make lots of extra sauce--it freezes like a dream, and makes a great lasagne sauce too!

So much to do...
So much to do, so little time. Sometimes I feel like I have filled my plate too full. I have to set aside time for my kid, my husband, my family, my friends, my job, my home, ...and time for me? Occasionally the balance seems a little out of whack--time to re-evaluate, change some things up, adjust the priorities ...and be thankful that my life is so full.
Life was just too full to pull off a big meal today--although I did find time this weekend to make Breakfast Pita's and a batch of bread, I didn't have the heart to make much more. Besides, I took my family grocery shopping yesterday (..how come it always costs more than when I shop alone??), and this is what they voted for for dinner tonight.
Wieners and Beans in the Crockpot
3-4 cans brown beans ( if you are lucky and live in the US, you can get Bushes Beans, if you live here like me, you 'll have to make do with whatever is at the store-libby's or heinz are fine)
1 pkg wieners, cut up (we like to use the locally made ones--not so much junk and still tasty-you decide!)
1 onion chopped
6-8 mushrooms sliced
3 tbsp brown sugar
1 tbsp yellow mustard
1 tbsp ketchup
cracked pepper
1/2 tsp crushed chilies
Mix all together in the crock pot and cook on low for 5-6 hours. Serve with some nice crusty bread and maybe a salad... Yummy!

Easy Peasy
Sometimes things just need to be easy, well maybe easy and delicious!
Here is a good one--everyone loves it, winter or summer. Cheap, easy, and so good!
Crock Pot Pulled Pork Sandwiches
4-5 pound pork shoulder roast, bone in (I like to buy them when they are 99cents a pound-score!)
mustard powder, S&P, 2 cloves garlic, any other of your favourite seasoning you might want to add
1 large onion chopped fine
1 bottle BBQ Sauce, my favourite for this recipe is Diana Sauce Original.
Cut off skin and as much fat as possible from the pork roast. Season the meat with the mustard powder and S&P. Place it in the crock pot with the 2 cloves of crushed garlic. Cook on high 3-5 hours or until easily pulled apart with a fork. (you will end up with some liquid-read: meat juice- in the crockpot)
Using 2 forks shred pork (discarding the bone and any fat that may still be on the meat). **
Add the onion, the shredded meat and 1/2 the bottle of BBQ sauce to the liquid in the crockpot. Mix well, add more BBQ sauce if it isn't saucy enough. Cook on high for another 2-3 hours or more. (you can't over cook this baby...) Serve on crusty buns with some Coleslaw on the side.
** if you want to cook until this point and put in the fridge to finish cooking the next day--it is an easy way to save some time on a busy day.
..also, this recipe freezes well--so make some extra and put it away for another day!

Being Well
As my Word of the Year is WELLNESS, I thought I would share a few thoughts about what that means to me.
Wellness = Balance, in all areas of your life.
Wellness means putting our own well being at an equal level to your family's.
Wellness is figuring out what is REALLY important, and what is just distraction.
Wellness is living simply.
Wellness is sharing-yourself, your stuff, your abundance, your being-ness.
Wellness is prioritizing.
Wellness is love--for yourself, for others, for the planet.
Wellness is activity and stillness...and knowing that there is a time for both.
What does wellness mean for you?
Dinner tonight was a bit of a crap shoot--2 new recipes, sometimes I think my family must feel like guinea pigs...
Both recipes turned out GREAT! Here they are!
"Florida Chicken" for the crock pot. (adapted from Slow Cooker Meals, by)
1 tbsp oil and 1 tbsp butter
5-6 pieces of Bone in Chicken legs and/or thighs (because they are cheap!)
1 1/4 cup orange juice
1tbsp combination of orange and lemon zest
2 tbsp soy sauce
1 tsp crushed red chili
1 tbsp sugar
3tbsp cornstarch, 3 tbsp water
Dry chicken pieces with a paper towel or napkin and Brown evenly on all sides in a hot frying pan with butter/oil. Place in the bottom of a crock pot (in one layer if possible).
Mix orange juice, zest, soy sauce, chili's and sugar. Pour over chicken and cook covered on high for 3-4 hours. (low 6-8 hours)
At mealtime, remove chicken to a plate. Combine cornstarch/water and add to the hot liquid in the crock pot. Stir until it begins to thicken...mmm yummy gravy!
Coconut Rice and Beans
(I can't believe I didn't know how easy this was before today--this is a life changing recipe for sure!! :)
1 cup white rice
1cup water
1cup coconut milk
1 can drained Romano beans (I think that any type will work--this is what I used)
Combine and bring to a boil. Reduce heat to simmer, cover and allow to simmer for about 15-20 minutes (until all the liquid is absorbed.) Add drained beans and toss to combine.
Top with snipped cilantro if you like.
(this dish was equally good with the gravy as without and Madeleine requested the leftovers for her lunch tomorrow! definitely a keeper!!)

Before I was a grown up...
Before I was a grown-up, my Mom cooked a roast every Sunday for dinner. My Dad insisted on a Roast Pork, Roast Chicken or a Roast of Beef.
I have to admit, at the time it didn't seem very special--and I know my Mom and Sister will agree that us girls could have often opted to never have a roast again!
However, know that I am a grown up I can say that one of my fondest memories of childhood (and still favourite things to do--my Dad will be so proud!) is lounging about on a Sunday afternoon smelling a roast cook in the oven or the crockpot.
So, being Sunday I cooked Pot Roast and Yorkshire Pudding for dinner, and Banana Cake for dessert--it is the perfect day!! So satisfying!
(...one extra thing I love about a roast--we will get a couple more meals out of it this week--there is enough for a couple of roast beef sandwiches--and lots of extra gravy to make French Onion Soup--will share that at a later date too!).
The Best Pot Roast
3 pounds inexpensive beef roast cut (like a blade roast)
seasonings (about 1 tsp each) mustard powder, cracked pepper, thyme, paprika, garlic powder.
1/3 cup flour.
Mix seasonings and flour, and coat roast in the mixture.
In 1tbsp butter and 1 tbsp oil, brown roast really well on all sides.
Place roast in the crock pot. Deglaze pan with 1 tbsp tomato paste and a cup of water. Add to crockpot. Top with 1 cup red wine, bayleaf, 1/4 tsp chili flakes, 2 tbsp red wine vinegar and enough water to almost cover the roast. Cover and cook about 4 hours on high.
**gravy--once the beef is done, remove from the crockpot and set aside. Mix 4tbsp brown Bisto, 2 tbsp cornstarch and about 1 cup water. Add to the juices in the pot and mix until it becomes thick
Yorkshire Pudding
**make this in the morning and let it sit covered loosley on the counter for the day.
2 eggs well beaten
1 1/2 cup flour
1 1/4 cup milk.
alternately add flour and milk to the eggs, mixing well until there are no lumps.
When ready to cook, add 1/2 tsp butter and a little of the roast juices to each section of a muffin tin. Heat pan in the over until very hot. Fill each muffin tin with the pudding mix until about 3/4 full. Bake at 375 degrees for about 40 minutes.
Enjoy!
